
The past two weeks, most of my diet has been back to eating either macrobiotics or organic raw foods. Today I needed a change of pace, and decided to make a hot sandwich.
Rudy’s Organics has a line of whole grain whole wheat English Muffins, which I have enjoyed either plain, with butter or jam and even with avocados. Today it was time to try something different.
Here’s what I ended up using:
2 slices of organic chicken breast
1 slice of organic pepper jack cheese
2 thinly sliced green or red organic peppers (enough so that it covers a layer)
Organic mayonnaise on both sides of the English Muffin
I wrapped each sandwich in foil, and heated it in my toaster oven at 325 degrees for 11 minutes. It was delish!
